FROM THE DESIGN OF THE INTERIORS TO THE TECHNIQUES SELECTED FOR THE CULTIVATION, EVERYTHING HAS BEEN MADE FOLLOWING THE CRITERIA OF SUSTAINABLE CONSTRUCTION AND AGRICULTURE.
THERE IS NO ELECTRO-SMOG: WHEN CIRCUITS ARE TURNED-OFF, ALL MAGNETIC FIELDS DISAPPEAR FROM THE ROOMS.
THE INSULATION OF THE INTERIORS HAS BEEN DONE WITH SUSTAINABLE BUILDING MATERIALS.
THE ROOFS ARE BUILT IN SUCH WAY THAT THE AIR CAN CIRCULATE MAINTAINING INSIDE THE ROOMS A PERFECT TEMPERATURE. THE INSULATION IS MADE FROM RECYCLED CORK.
HOT WATER IS GENERATED BY SOLAR PANELS LOCATED ABOVE THE WINE CELLAR.
IN 2014, WE ADDED A PHOTOVOLTAIC SYSTEM THAT FEEDS THE VINIFICATION CELLAR AND THE COOLING SYSTEM OF THE BOUTIQUE HOTEL.
ALL THE FABRICS USED INSIDE THE APARTMENTS ARE FROM TENSIRA, A PARISIAN BRAND THAT RELAUNCHED THE PRODUCTION OF SUSTAINABLE KAPOK IN GUINEA, FROM RAW MATERIAL TO FINISHED PRODUCT.

A NATURAL PRODUCTION

LOVE OF THE TERRITORY, PASSION FOR THE WINE : IT ALL STARTS FROM THERE, FROM THE ATTENTION GIVEN TO THE PROMISING AND RICH SOIL OF MAREMMA AND OUR DESIRE TO EXPLORE ITS POTENTIAL, IN THE RESPECT OF THE ENVIRONMENT AND THANKS TO THE COMBINATION OF TRADITIONAL AND NEW ENOLOGICAL AND AGRONOMICAL TECHNIQUES.
THE CULTIVATION OF THE VINES FROM PIANIROSSI INVOLVES TECHNIQUES WITH LOW ENVIRONMENTAL IMPACT TO REDUCE TO ITS MINIMUM THE USE OF PESTICIDES. WITH A GREAT ATTENTION TO THE METEOROLOGICAL EVENTS, WE ONLY TREAT THE VINES WITH PESTICIDES ONLY WHEN CLIMATE CONDITIONS COULD GENERATE SICKNESSES. THE SAME APPLIES AGAINST ANIMALS THAT COULD DAMAGE THE VINES USING MAINLY TRAPS TO CAPTURE THEM.

DURING THE PRODUCTION OF THE WINES, WE ALSO LIMIT THE USE OF ADDED PRODUCTS. IN ADDITION TO THE CAREFULLY SELECTED YEASTS IN ORDER TO OBTAIN A STEADY FERMENTATION, THE USE OF OTHER ADDITIVES IS REDUCED TO ITS MINIMUM. NUTRIENTS FOR THE YEASTS ARE EXCLUSIVELY ADDED WHEN LABORATORY ANALYSIS REVEAL THE TRUE NECESSITY. FOR THE ROSÉ, THE PROTEIN STABILIZATION IS DONE WITH BENTONITE, A CLAY, WITHOUT USING PRODUCTS FROM ANIMAL ORIGIN.

 

THE OLIVE OIL

OUR VOCATION IS ALMOST ENTIRELY BIO: IN THE OLIVE GROVE, WE ONLY USE COPER TO FIGHT AGAINST FUNGUS SICKNESSES, ONLY ONCE A YEAR.
THE OLIVE FLY, THE WORST PARASITE FOR THIS CULTIVATION, IS FOUGHT AGAINST WITH THE SAME PROCEDURE USED AGAINST THE LEPIDOPTERAN CERURA IN THE VINEYARD: WE INSTALL TRAPS IN THE OLIVE GROVE AND ACCORDINGLY TO THE NUMBER OF CAPTURES AND VISIBLE DAMAGES ON THE OLIVES, WE JUDGE IF IT IS NECESSARY TO TAKE ACTION.
THE OLIVES ARE PRESSED IN A MILL FROM THE AREA THAT USES ADVANCED TECHNOLOGY WORKING AT LOW TEMPERATURE IN ORDER TO PRESERVE THE ORGANOLEPTIC CHARACTERISTICS OF THE PRODUCT. THE OIL IS THEN SIMPLY BOTTLED WITHOUT ANY ADDICTIVE PRODUCTS.

 

THE VEGETABLE GARDEN FOR ZERO-KM PRODUCTS

ANOTHER ADVANTAGE OF OUR FARM, OUR GARDEN IS CULTIVATED RESPECTING ALSO THE RULES OF THE BIO CULTIVATION. NO CHEMICAL PRODUCTS ARE USED. THE FRUITS AND VEGETABLES ARE PICKED EVERY DAY TO BE SERVED TO OUR GUESTS FROM THE RESTAURANT.
